Fresh Tomato Dressing

In blender, puree:
  • 1 small tomato, chopped
  • 2 Tbsp olive oil
  • 2 Tbsp red wine vinegar
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper

Stir in 1 Tbsp clipped fresh chives and 1 tsp chopped fresh oregano leaves after blending.

Makes about 3/4 cup.
